Oatmeal Chocolate Chip Banana Bread + Why I’ve been MIA for the past 6 months!

Well hello world, it’s been a while hasn’t it? Considering my last post was almost 6 months ago, I feel slightly guilty only posting now. I’ve been so busy with exams and getting ready for university but not to worry, I’m still here and I’ve got great new recipes to share.

I’m also looking to explore different topics on my blog. Of course I will still be posting recipes, but perhaps things like sample meal plans, exercise routines, beauty hacks and overall lifestyle updates will be slightly more abundantly present from now on…

 

Anyway, back to the recipe! This is adapted from one I stumbled upon a while back. I modified it to my liking and reduced the sugar by a lot, so it can be enjoyed guilt free.

Ps: only make this if you’re prepared to eat the WHOLE thing in one day because you’re really gonna want to (or at least I hope!)

Ingredients:

-3 tbsp Coconut Oil melted

-6 tbsp applesauce

-2 tbsp of Honey + 2 tbsp of Maple Syrup combined (can be made vegan by using maple syrup only)

-2 (very ripe medium-large sized) Bananas mashed

-2 Eggs (can be made vegan by replacing eggs with 2 flax/chia eggs; one flax egg= 1 tbsp of ground flax or chia seeds mixed with 2 tbsp of water and refrigerated for 15 minutes)

-1 tsp Baking Soda

-1/2 tsp fine Salt

-1 tsp Pure Vanilla Extract

-1 and 3/4 cups oats (can be made gluten free if oats are certified GF)

-1/4 cup semi-sweet or dark Chocolate Chips (optional)

Directions:

Preheat oven to 325˚F.

Combine the oats, baking soda, salt and cinnamon in a blender or food processor and blend/pulse into a fine flour like consistency (if you prefer a hardier banana bread leave the oats a little coarser but if you prefer a very fine smoother texture blend them into a flour like state) and set aside.

In a separate bowl whisk the melted coconut oil, honey and/or maple syrup and applesauce together until fully blended. Then add the eggs (or flax/chia eggs), vanilla and mashed bananas and continue to mix until smooth.

Next, add the flour mixture in two or three separate batches. Not adding the entire flour mixture all at once will allow the batter to be a lot smoother and free of flour clumps. Once everything is fully incorporated pour the mixture into a greased (use coconut oil to do so) or parchment paper lined loaf pan or even easier a silicon loaf pan and bake for 55-60 minutes depending on your oven. Once a toothpick comes out clean allow the bread to cool and enjoy.
