Here’s a recipe for one of my favorite snacks. It’s a great source of protein and fun to make too!

Eggs are a fantastic poultry staple, they contain many vitamins such as Vitamin A, and Vitamin B. One single egg contains 14 essential nutrients, which is why it’s important to eat the WHOLE egg! Choline is a substance that is in fact found in the yolk of the egg and it stimulates brain development and function. Eggs also contain Omega-3’s which are very healthy fatty acids, especially for your brain who’s cells require twice the energy of any other cell in your body! So don’t be afraid to have eggs, they are delicious and can be very versatile. Here’s my spin on one of the best ways to enjoy an egg! Try and buy free-range or organic eggs when you can as they are the most natural.

Egg Cupcake

Ingredients :

-1 egg

-parsley *TIP (Freeze your herbs they last longer and stay just as fresh as when they were bought!) *

-smoked salmon

-pepper

-chili powder

-green onions

Preheat oven to 350 degrees C˚.

Beat the egg in a bowl then add a dash of chopped parsley, pepper, and chili powder. Add a small amount of diced smoked salmon as well as finely chopped green onions.

Pour into lightly greased muffin tins or my personal favorite individual silicone muffins cups and bake for 20-30 minutes or until puffed up, firm to touch and slightly golden on top.

They last a couple of days in the fridge and a couple weeks in the freezer. You could even make a dozen in advance to freeze and have an easy snack for school or on the go!

Note: Don’t worry if they collapse slightly at the bottom of the cupcake, it’s normal, they still taste just as good!
Tip: If you cover the muffin cups with a mini foil lid, this reduces the chance of the loosing their shape. Also if you’re in a rush, pop the silicone muffin cup in the microwave for a minute or so for a perfectly cooked cupcake!
