Recipe: Costa Rica Bean Salsa
This is the best salsa ever, not only high in protein but delicious too. This recipe was inspired by the third Blue Zone in the Nicoya Peninsula, Costa Rica.
-2 cans Black Beans
-1 Red Pepper (finely chopped)
-2 cups Organic Frozen Corn (non-GMO)
-1/4 cup chopped Sweet Onion
-1 cup sliced Black Olives
-Fresh Cilantro (as much as you wish)
-2 chopped Garlic Cloves
-1/2 cup Oil (preferably, grape seed or organic canola)
-6 tbsp Lime Juice
-1/4 Rice Vinegar
-2 tbsp of Sugar
-1/2-1 tsp Ground Cumin
Warm all the dressing ingredients together until dissolved. When cool, add the dressing to the salsa ingredients and enjoy alone, on a bed of lettuce or with organic (non-GMO, of course) corn chips!
